Vegan Pumpkin Muffins

These vegan pumpkin muffins are AMAZING and perfect for this time of year! This recipe is also gluten free and can easily be low carb. So, if you’re planning a night in watching scary movies or going to a dinner party and need something easy to bring, this is the recipe for you!

Total Time: 30 minutes

Serving size: 12 muffins

Ingredients

  • Pumpkin puree

  • Maple syrup

  • Almond/Oat milk

  • Olive or avocado oil

  • Flour (if low carb, use almond flour)

  • Cinnamon

  • Baking powder

  • Dark chocolate chips (optional)

 

Instructions

  1. Grab a mixing bowl and add 1/2 cup of the pumpkin puree, 1/3 cup maple syrup, 1/2 cup of your preferred milk choice, and 2 tbsp of oil.

  2. Mix together your wet ingredients.

  3. In the same bowl, add 1 1/2 cups of your preferred flour, 1 tbsp of cinnamon, 1 tsp of baking powder, and 1 cup of chocolate chips (optional).

  4. Preheat oven to 400º, spray your muffin tin and fill.

  5. Bake for 23-25 minutes.

  6. Enjoy!
