Lemon Pepper Salmon

Hi, everyone! Since the start of quarantine, I have definitely devoted myself to spending more time in the kitchen. Cooking delicious meals should not be reserved for chefs or people with access to “top notch” recipes and utensils. I used to have a fear of cooking horrible meals and I can say with confidence that these meals are so EASILY DIVINE, with max cooking and prep time of 30 MINUTES! It’s that simple!


Note: I am a pescatarian (a vegetarian that eats seafood) so these meals are perfect for me, but they can be substituted for many different things to incorporate your dietary needs!

  • Shoutout to my friend Joseph for putting me on to this! This foil trick will ensure that your salmon is perfectly cooked with a beautiful crisp on the outside. 

Okay, you want a healthy dinner that's easy, quick, and delicious, what should you do? Well, I got one that you can pair with literally anything! Keep reading! 


Ingredients

  • Salmon filets (frozen or fresh) 

  • Lemon (cut up into slices) 

  • Olive oil 

  • Lemon Pepper Seasoning, this is the one I use:

  • Garlic & Onion powder 

  • Aluminum foil

Instructions

  1. Preheat oven to 410 degrees

  2. Cut out a decent amount of foil, enough to cover the salmon entirely from bottom to top. 

  3. Lay down your salmon 

  4. Cover with olive oil and season with garlic, onion powder and lemon pepper seasoning generously, on all sides of the fish. 

  5. Lay a slice of lemon on top of each filet (see picture above) 

  6. Cover the salmon with foil and pinch all openings so the juices stay in one place (this ensures the PERFECT salmon filet to eat) 

  7. Place in oven for 10-14 minutes depending on the size of your filet. 

  8. After this, leave the fish on the broil setting with the top foil removed to give your filet some color and to crisp up the top and sides for about 2-3 minutes

  9. Serve with pasta, potatoes, veggies, and SO MUCH MORE! See pictures below!
