Mariah’s Greek Salad Recipe

A classic greek salad has been my go to this summer! It’s quick, easy, and refreshing on a hot summer day.

Ingredients

For the salad

  • Romaine or ice berg lettuce

  • Grape tomatoes (my preferred)

  • Green peppers (optional)

  • Kalamata olives

  • Cucumber

  • Feta cheese

  • Red onion

For the dressing

  • Extra-virgin olive oil

  • Red wine vinegar

  • Salt & pepper

  • Fresh lemon juice

  • Dried oregano

 

Instructions

  1. Please wash and rinse your fruits & vegetables people!!

  2. Cut up your lettuce, tomatoes, pepper, cucumber, and red onion into a large bowl. (I like to add the kalamata olives and feta cheese last, after the dressing is made and poured.)

  3. In a small bowl, mix 1/4 cup of olive oil, 2 tablespoons (or capfuls) of red wine vinegar, 2 tablespoons of your freshly squeezed lemon juice, 1 1/2 teaspoons of dried oregano, and a pinch of both salt and pepper.

  4. Drizzle your dressing over your salad and mix.

  5. Add your kalamata olives and feta cheese.

  6. Enjoy!
