Mariah’s Greek Salad Recipe

A classic greek salad has been my go to this summer! It’s quick, easy, and refreshing on a hot summer day.
Ingredients
For the salad
Romaine or ice berg lettuce
Grape tomatoes (my preferred)
Green peppers (optional)
Kalamata olives
Cucumber
Feta cheese
Red onion
For the dressing
Extra-virgin olive oil
Red wine vinegar
Salt & pepper
Fresh lemon juice
Dried oregano
Instructions
Please wash and rinse your fruits & vegetables people!!
Cut up your lettuce, tomatoes, pepper, cucumber, and red onion into a large bowl. (I like to add the kalamata olives and feta cheese last, after the dressing is made and poured.)
In a small bowl, mix 1/4 cup of olive oil, 2 tablespoons (or capfuls) of red wine vinegar, 2 tablespoons of your freshly squeezed lemon juice, 1 1/2 teaspoons of dried oregano, and a pinch of both salt and pepper.
Drizzle your dressing over your salad and mix.
Add your kalamata olives and feta cheese.
